Aubergine

Cook this either on the griddle or BBQ. It can also be roasted or added to stews, ratatouille or to curries.

This goes well with cheese (feta, halloumi, mozzarella, parmesan), Asian flavourings, lamb, tomatoes, garlic.

You can store this for up to 1 week in the salad draw of the fridge. Wash before use and then cut off the stem and leafy cap. Slice or chunk if needed.
